Every year my mum makes me a fantastic birthday cake to share with my sisters, dog parents and local pooch pals. If you want a lovely sweet treat, here’s the recipe.

This cake is suitable for freezing so you can always save some for later!

Ingredients

• 1 Egg
• 65g smooth Peanut Butter
• 60 mls of Vegetable Oil
• 1 teaspoon of vanilla essence
• 80g of Honey
• 130g Grated Carrot
• 120g Wholemeal Flour (sifted)
• 1 tsp Bicarbonate of Soda

Pre-heat oven to 180 degrees celsius.

Grease a cake tin – square or round.

Combine egg, peanut butter, oil, vanilla essence and honey.

Stir in grated carrot.

Sift flour and fold into mixture along with bicarbonate of soda.

Spoon into tin.

Bake for around 40 minutes and leave to cool completely before serving.
